PIZZERIA BIO TRATTORIA

IN BOCCA AL LUPO

LISBON’S FIRST ORGANIC PIZZERIA

OUR VISION

Only with the best ingredients can you make the best pizza.

– IN BOCCA AL LUPO

The organic pizzeria In Bocca Al Lupo is the realisation of a family dream. The Italian great-grandmother of chef and owner, Ágata Mandillo, opened the first Italian restaurant in Lisbon, La Gondola, on Av. de Berna during the late 1940s. Thus the culture, language and ethos of Italian gastronomy would go on to indelibly light the way for In Bocca Al Lupo – the inevitable fulfilment of this family history.

We are a family project; informal and detail-oriented – we cook with love and refinement, paying respect to the classics of Italian cuisine but aiming to create something new and exciting every day using the best organic products sourced directly from the best producers. We have created a warm and welcoming atmosphere so that whoever comes to visit feels at home.

Our products are hand-chosen and we have been responsible for the introduction of numerous organic Italian products, primarily meats and cheeses, to the Portuguese market. We only use 100% organic products because it is those products that fill and satisfy our senses and, above all, offer us the opportunity to limit our ecological footprint as much as possible. We are an organic restaurant because that is who we are, as a part of our family legacy stretching back at least 35 years. We give preference to local and directly sourced products because it guarantees freshness, sustainability and a fair price being paid to those producing our products. We have a ‘natural-first’ approach to our product selection, valuing above all the complex simplicity nature gives us. In keeping with these ideals we make everything ‘in-house’ – our pesto, our sauce, our dough, our fermented products (such as our kombucha), our smoked products (such as our smoked mozzarella), our ice creams, the la reine cake for our Tiramisu, etc. We live and breathe our craft.

At In Bocca Al Lupo we offer an inclusive menu, with many vegetarian, vegan and gluten free options. For this reason we also offer meat options because in our house everyone is welcome regardless of their tastes, preferences or dietary restrictions. Ultimately, sharing a meal with others is one of the most important cultural and social expressions of humanity.

We genuinely care about people, about the impact we have and about the example we set for others. In Bocca Al Lupo is more than a pizzeria, we are an ongoing project, a way of being and an approach to creating food – food that benefits everyone, that creates rather than destroys, and, above all, food that makes us happy!

Público: Entrevista In Bocca al Lupo
